Taco Casserole

Sharen Hollon has made this for Tuesday Night Social several times. It’s very popular and a good dish to take to a potluck.

Ingredients:

• 2 lbs ground beef

• 2 red peppers, chopped

• 1 chopped onion

• 6 tsp taco seasoning

• 2 tsp oregano

• 4 cups salsa

• 6 cups shredded cheese

• 2 cans black beans, drained and rinsed

• 18 corn tortillas

Instructions:

1. Cook beef, add pepper and onion. Add taco seasoning and oregano, then salsa and beans.

2. In bottom of greased 9”x13” pan, add a scant amount of meat mixture. Tear tortillas into 4-6 pieces and spread generously on meat mixture. Add 1/3 of cheese. Add more torn tortillas. Add more meat mixture, then add 1/3 cheese. Add more torn tortillas. Top with the remaining meat mixture.

3. Bake 30-45 minutes at 350 degrees, top with remaining cheese for the last few minutes of baking.

These moist muffins were made by Sharon Brock for the Petal Pushers brunch in December and were very popular, with several people asking for the recipe.

These made-from-scratch muffins are worth the small additional effort, as they are moist and slightly sweet. It’s another recipe from Dee March.

This recipe came from Dee March. Most of us have a chili recipe, but this one is easy with quick preparation — just the kind we like!

I made this for the first time for Thanksgiving. I love sweet potatoes, and these would be great anytime, especially served with ham.

This was served recently at a Racquet Club luncheon hosted by Ellen Micheli and Gwen Ryan. I hadn’t had punch recently, so it was a nice change. This would be great to serve at a shower or group luncheon
